2/3 cup of butter or margarine (softened)
1 cup of sugar
3 eggs
1 2/3 cups of plain flour
1 cup of cornmeal or polenta
4 1/2 teaspoons of baking powder
1 teaspoon of salt

In a bowl mix the softened butter and another bowl combine the eggs and milk.  Then mix the flour, cornmeal or polenta, baking powder and salt in the food processor while adding the butter/sugar mixture and the egg mixture alternately until even.  Pour the mixture into a greased baking pan and bake at 200 degrees Celsius (400 degrees Fahrenheit) for about 20-25 minutes.  To check if it's ready, stick a toothpick in the center and if it comes out clean it's done.  I like to cut mine into cubes and serve warm.

  1. I have ALWAYS wanted to know how to make cornbread... must try it!!

What do you serve it with?

  2. Sorry - how much milk? It seems to be missing from the recipe. Thks
